Our Istanbul-Style Ghraybeh is a refined take on the beloved Middle Eastern shortbread cookie elevated with a luxurious pistachio and almond filling and crafted to perfection using a time-honored technique. Light, airy, and delicately sweet, these cookies are as beautiful as they are delicious.

Each cookie is made from a cloud-like almond meringue base, gently piped by hand and crowned with a whole pistachio before baking. Once cooled, two cookies are sandwiched together with a vibrant green pistachio-almond paste, lightly scented with almond essence.
